So the other day I was in the mood for a burger for dinner so I bought some ground turkey from Trader Joe’s. I also got some mushrooms to put on top because I’ve never really been into them until my roommate, Allison started sautéing them and shared some with me. Pretty good (acquired taste).

I seasoned the turkey with pepper, crushed red pepper and Old Bay (MD stand up) shaped it into patties then cooked them in a skillet (ready for it to be grillin’ weather).

I sautéed the mushrooms with shallots and found out the hard way that shallots burn my eyes ten times worse than onions (see video above). I seasoned them with pink Himalayan salt and pepper then put them on top of the burger. The patties came out smaller than I expected so technically they’re sliders but it’s cooolll. Good nonetheless!

What’s a burger without fries?

I often make fries from scratch using regular Idaho potatoes, fried in olive oil and seasoned with salt pepper and Old Bay but on this day I figured I’d switch it up. I don’t have much experience with cooking sweet potatoes/yams myself but, again, my roommate, Allison has been kind enough to share her roasted sweet potatoes with me in the past so between that and my mom’s famous sweet potato pie (post, soon come) I’ve come to enjoy them in their various forms.

I got a few from the Food Bazaar store by my house and pulled up a good old recipe to give them a try!

p.s. - for the dipping sauce (dipped the fries AND the burger) I mixed Sweet Baby Ray’s Honey Chipotle BBQ sauce and Kraft Sweet & Sour sauce. Delish.

Threw some simple pasta together [sauteed mushrooms, tomato garlic and onion pasta sauce and spinach] then tried out this recipe my mom sent me for oven roasted parmesan brussel sprouts. HIGHLY RECOMMENDED.

Spinach Salad 1

Spinach salad I threw together featuring cherry tomatoes, honey roasted peanuts and raisins then topped with grated carrots, feta cheese and chipotle ranch dressing. Mmmmm

 

Had a taste for some good salmon (as I always do) and wanted to try something different and flavorful. Came out amaazinggg. Ready to make this one again!

Before the dressing so you can see everything thats in it: Spinach, broccoli, cherry tomatoes, chopped red onions, boiled egg, raisins, peanuts, sunflower seeds *heart eyes*.

PENNE ROSA feat. Parmesan Crusted Chicken

So last Sunday when it came time for dinner I had a taste for the Penne Rosa I used to get every time I went to Noodles & Company. However, now that I live in New York the closest Noodles & Company is almost an hour away >_<. I'm sure there are plenty of non-chain, authentic, Italian spots nearby that make amazing penne rosa but I have yet to discover those places so I found a recipe and made my own!
